what is konjac jelly?
Konjac (pronounced "kon-yack") jelly is made from the ancient Asian Konjac root rich in glucomannan fiber. Glucomannan is a natural soluble fiber found naturally in the root that can absorb up to 50x its weight in water - which is why konjac jelly feels satisfying and naturally filling.

why no sugar alcohols?
When we started developing Mimitime, we tried nearly every konjac jelly on the market in Korea and found that almost all leaned on Erythritol, Sucralose, and Ace-K (Acesulfame Potassium) to cut out sugar. That tradeoff was a strong, artificial, overly-sweet aftertaste that didn't feel like something we'd want to eat every day.
We're proud to formulate without ANY sugar alcohols. Instead, Mimitime is sweetened naturally with a touch of organic brown sugar, allulose, and stevia. The result is a snack that's balanced and just sweet enough to crave.
why marine collagen?
